Basmati Rice with dishes [インド料理]


When I was queuing for my Briyani previously, I spied the lady in front of me walking away with her lunch and thought I saw basmati rice on her tray.

I wasn't sure if I saw correctly, as typically Indian-muslim foodstalls only use basmati rice for briyani, and often mix the basmatic rice with cheaper short-grain rice to cut cost.

Lo! This Indian-muslim foodstall does serve basmati rice which was cooked with more water and slightly longer, hence making the rice softer and fluffier compared to the drier and harder basmati rice I had eaten at hotel buffets.  I think some salt was added to the cooking water, with the rice tasting slightly salty.  Anyhow, I was happy to note that I couldn't really find short-grain rice among the basmati rice and wished the portion of rice was larger.

The chicken drumstick was fried in what I think is oil that is over-used.  The outer skin was crispy-hard, yet the chicken beneath the skin remained juicy and tender.  Just wished that the oil wasn't so over-used.

The diced ocra with chickpeas was interesting.  It was spiced, yet not spicy.  The chickpeas were also not overcooked like those at some stalls, so there was still some crunchiness in them.

The mashed potatoes with lentils is a common dish at Indian-muslim foodstalls.  I like that this stall spices its food, yet goes relatively light on the chilli so that the dishes can be enjoyed for their spices without the spiciness.
